Description
Saperavi is a dark-skinned, pink-fleshed grape variety that originated from Kakheti. Saperavi is one of the distinctive red grapes in the world, distinguished by its univer-sality and unique flavor properties, providing the best material for number of sorts of wine. Specifically, full, harmonious wines of a Bordeaux type are made from Sapera-vi, such as the high-quality red wines of Kvareli (Kindzmarauli), Nafareuli, Sabue, Artani (Sanavardo), and others. The vineyards for these variety of grapes are cultivat-ed on the left bank of the Alazani – along the Caucasus Mountains, primarily in calci-um carbonate and iron-alluvial non-carbonate soils.
Technology
Destemming the grapes; sulfitation, adding the maceration enzyms, skin contact for 12-18 hours; adding the yeasts; fermentation for 10 days, at 22-27 °C; storing in stainless steel vessel; storing with oak for 3 months, clarifying wine with bentonite and gelatine, filtering, adding the metatartaric acid and bottling.
