Description
Khikhvi is a local less-spread standardized variety of grapes from the Kakheti region of Georgia, providing high-quality table white wine and, in some micro-districts, good-quality dessert wine too. European (made out of only grape juice) table wine is a bright tea-colored greenish, tender, harmonious, light, specific aroma wine. Kakhetian style (made of whole constituting parts of grapes) wines are characterized by a dark tea color, harmonic, and tender taste. During many degustation sessions and contests, Khvikhvi wine has been awarded as a high-quality wine.
Kisi is a grapevine also from the Kakheti region of Georgia, providing high-quality white and amber wines. It can say that Kisi has the actual properties of two major in-dustrial varieties – Mtsvane and Rkatsiteli. From Kisi a single and mixed sorts table wines are made. Pure Kisi wine is always valuable. High-quality single sort wines with origin from the villages Akhmeta, Kistauri, Ruispiri, and Ikalto are produced sometimes from Mtsvane, Kisi, and Khikhv, however more often they are mixed with Rkatsiteli. The long-lasting research and observation carried out by the Institute of Viticulture and Oenology of Georgia proved the value and quality of Kisi manifested in delicate properties of wine made of both European and Kakhetian methods.
Technology
Destemming the grapes, sulfitation, adding the maceration enzyms, skin contact for 12-18 hours, pressing, juice settling, racking the juice, adding the yeasts, fermentation for 3 weeks, at 14 °C, storing in stainless steel vessel, clarifying wine with bentonite, filtering, adding the metatartaric acid and bottling.
