Description
Saperavi is a dark-skinned, pink-fleshed grape variety that originated from Kakheti. Saperavi is one of the distinctive red grapes in the world, distinguished by its universality and unique flavor properties, providing the best material for number of sorts of wine. Specifically, full, harmonious wines of a Bordeaux type are made from Saperavi, such as the high-quality red wines of Kvareli (Kindzmarauli), Nafareuli, Sabue, Artani (Sanavardo), and others. The vineyards for these variety of grapes are cultivated on the left bank of the Alazani – along the Caucasus Mountains, primarily in calcium carbonate and iron-alluvial non-carbonate soils.
Technology
Destemming the grapes; sulfitation, adding the maceration enzyms, skin contact for 12-18 hours; adding the yeasts; fermentation for 10 days, at 22-27 °C; storing in stainless steel vessel; Clarifying wine with bentonite and gelatine, filtering, adding the metatartaric acid and bottling.
